Bahrain: Chicken Machboos

This time we're putting a spicy spin the the traditional meat and rice dish. You'll need a few interesting and maybe hard to find ingredients to really make this in the traditional fashion. Bahrain machboos almost always contain loomi, baharat, and rose water.
-4 thighs and 4 drumsticks
-1 medium onion, diced
-1 green jalapeno, diced
-1 can of diced tomatoes
-1 tbsp fresh grated ginger
-3 cloves of garlic, sliced
-5-8 cardamom pods, dehusked
-2 loomi, puncture a hole in them
-1 tsp of lemon juice
-1 cup of basmati rice
-2.5 cups chicken stock
Spice mix:
-1 tbsp baharat
-1 tsp cumin
-1 tsp turmeric
-1/2 tsp paprika
-1/4 tsp cinnamon
-1 tsp salt

Chicken:
-Brush chicken with olive oil and rub it with half of your spice mix. Cook at 450 for 20 minutes
-Heat coconut oil in a large pan and add the onions. Cook over medium heat until browned.
-Add the jalapeno, ginger, and garlic and saute for 2 minutes.
-Add half of your spice mix, loomis, cardamom, tomatoes, lemon juice, and 1 cup of stock.
-Mix the chicken in. Cover over low heat until liquids have reduced and chicken is cooked.
Rice:
I like to use my rice cooker whenever possible, if you don't own one you will need to do this stove top
-1 cup of basmatti rice with 1.5 cups of chicken stock, cook
Finished Machboos:
-Mix the chicken and the rice together, place on a platter and sprits with rose water.
