Deciding to make a different national dish once a week may seem to you like a project that will take a long time, and you would be right. There are 196 countries in the world and I intend to make a traditional dish from each. Before I can start cooking I need to decide in which order I am going to go around the globe in my suburban kitchen. Working in continents makes the most sense, and I will start with the continent with the largest population and work down from there. So I will be starting with Asia followed by: Africa, Europe, North America, South America, and Oceania. I won't be including Antarctica for obvious reasons. Working through the countries alphabetically is smart as that will offer a good variety of cuisine from week to week. After sorting that out I have complied a list of all the countries in Asia and their corresponding dishes. If this sounds like an interesting idea stay tuned for our first dish hailing from Afghanistan: Kabuli pulao.
